Chrissy Teigen's Lemony Arugula Cacio e Pepe

Cacio e Pepe! *Expresses excitement by talking with hands*

Kosher Salt
12 oz dried spaghetti
1/4 cup EVOO
1/4 lb pancetta
3 tbsp minced garlic
1 tsp red pepper flakes
pepper! lots of ground pepper
1/4 cup lemon juice
1.5 cups grated Parmesan
3 cups baby arugula

Boil pasta for 11 min, make sure it's al dente. Scoop one cup of pasta water from pot before draining. Set aside the cup of water. Drain pasta.



Dat sizzle. 





In a large skillet, cook pancetta over medium heat until crisp for about 7-9 min. Add olive oil, garlic, red pepper flake, and pepper until fragrant. 


Add lemon juice, then add pasta and toss. Add the parm and toss, adding pasta water a leeeetle bit at a time to help coat the noodles. Add arugula, toss until wilted. Season as you like with salt and pepper.

I could continue to express myself through song, but instead, I shall write. Read on! 
I know I never really used this thing during the summer, as I intended. Though I had the best of intentions, my summer job ended up slowly taking over my life (note* I loved my job and wouldn’t change a thing. The people I worked with were amazing and everyone reading should buy tickets to Swallow Hill Music Association’s 2016 Summer Season). Now that I have some time to kill before I enter the real world, I figured I’d give this thing another shot. So, hey what’s up, hello!
Last one, I swear. Here we go.

Everyone should have a few people in their friend arsenal who can deliver tough love. My friends, Kathleen and Aly, will never hold a punch. Whenever life is terrible, they will actually tell me if life is terrible. Calling them for an emergency sister-circle ends in various outcomes: laughing about how stupid other people are, crying, recalling strange memories after a tequila shot, and maybe even some rage against the patriarchy. Note: a lot of these involve bitterness. We joke about how bitter the three of us can be. One night as we sat around a table eating frozen yogurt, Kathleen declared, “We should try to be less bitter! This would be good. Yeah?” Yeah. Sure.

In an effort to be less bitter, I am trying to do more of what I love. Naturally, what I love involves food and friendship. Depending on the day… phriendship!

I’m going to introduce a wild concept: what if I considered myself to be one of my best friends? Maybe this is the solution to less bitterness. It is an admirable trait to be a loyal, loving, and empathetic confidante— but somehow, not as admirable to give yourself the same attention. This is idea brought me back to you. Sharing these stories fills my well.
Snapchatting also fills my well. 


Raise your hand if you love Chrissy Teigen. I do, because she’s badass. She is #goals. She’s a supermodel, married to John Legend, funny as hell, and just released the most amazing cookbook, Cravings. One of the best moments of 2016 (so far) was when she liked my recent tweet:

I’m using Cravings as an excuse spend money on expensive cheese and hang out with my friends. Furthermore, I’m using the cookbook to make time for myself and the things that make me happy. Like pasta. Pasta rules.
